Here’s a simple recipe to make Angur Makhane ki Sabji:
Ingredients:
2 cups of Lotus seeds (makhana)
1 cup of Grapes
2 teaspoon Curd
Khoya
Kasuri Methi
Garam Masala
1 onion, finely chopped
1 tomato, finely chopped
1 tablespoon of ginger-garlic paste
1 teaspoon of cumin seeds
1 teaspoon of coriander powder
1 teaspoon of garam masala powder
1 teaspoon of red chili powder
1 teaspoon of turmeric powder
Salt to taste
2 tablespoons of Pure Ghee
Fresh coriander leaves for garnishing
Instructions step by step:
In a pan, dry roast the Lotus seeds (makhana) on Sigri (low flame) until they turn crispy. Keep aside.
Heat Ghee in the same pan and add cumin seeds. Once they splutter, add finely chopped onion and ginger-garlic paste. Saute until the onions turn golden brown.
Add finely chopped tomatoes, Curd, coriander powder, red chili powder, turmeric powder, and garam masala powder. Mix well and cook until the tomatoes turn soft and mushy, add Khoya (dry mava/cream).
Now, add the roasted Lotus seeds (makhana) and Grapes to the pan. Mix well and cook for a few minutes until the Grapes turn soft and release their juices.
Add salt to taste and mix well.
Garnish with fresh coriander leaves and serve hot with roti or rice.
