Meaning of Sattvic Diet refers to the food which is hygienic yet healthy diet for body, contains qualities such as purity, essential, natural, vital, energy-containing, clean, conscious, etc. the food which does not harm you in any sense. In our experience, it is a myth to get the purity of such kind in today’s era.
Recipe to cover – Mitti ki Handi Panch Ratna Dal Tadka with Multigrain Roti (Chapati), Chutney of Green Chilli with Desi Kachri (wild melons), butter milk (bilona chaas).
Food Ingredients – Mix of five different pulses, Green Chilli, Tomato, Garlic, Rock Salt (sendha namak)/Black salt, Red Chilli powder, Turmeric powder, cumin seeds, Mustard seeds, Peanuts refined Oil, Pure Cow Ghee, asafoetida (desi hing), Coriander powder and Lemon.
Food Preparation – They prepares food on a Sigri (a stove used for cooking – The fuel used is usually coal, dried cow dung and wood) already set up for the raw and better taste – food preparation for Dal Tadka started with mix of five different pulses – soaking lentils – boiling in a Matka (mitti ka ghara) usually it takes an hour as the cook confirmed – the tempering (Tadka) preparation started beside in a separate Matka – foam extraction while boiling to remove so called existing chemicals as the next step – then mix earrings in boiling pulses – then Tadka mix into boiled dal. For Chutney – Oil in Handi – mustard seeds and grinded green chilli and Desi Kachri paste along with coriander powder – it can be done in a span of time. For Multigrain Roti – of course from multigrain flour and baked in a Tandoor.
Our Experience – Essentially, the restaurant set up was in a raw house and food cooking set up were in the open area outside the building. Virtual Banjara visited to experience the mentioned Sattvic Diet which they claim to offer with purity and with hygienic food prepared like the process being followed in our villages. The belief behind this food is to keep humanity healthy with simple yet exciting food. We liked the taste and the way of preparation of the food with all raw/organic ingredients.
