is a famous dish or meat curry from Rajasthan, India. Mainly prepared with hot spices such as Mathania chillies along with rich use of garlic in it. It is said that this food was traditionally prepared with wild meat (jungle maans) and was a favourite among the royalties.
This time Virtua Banjara reached a man who served longer as a cook for a royal family and has expertise in this recipe called Laal Maans from Rajasthan, India. His name is Doulat Singh aged around 53 years (in October 2022) and currently running a small takeaway restaurant in Jaipur, Rajasthan.

Food Ingredients – Meat, Mustard Oil, Salt, Coriander powder, Turmeric Powder, Mathania Chilli Powder, whole spices (Garam Masala), Onion, Curd, Ginger-Garlic Paste, etc.
Food Preparation – started with Mustard Oil, later he mixed whole spices then Onion – after the onion gets fried – Meat got into the vessel for the journey – later salt and turmeric powder jumped into it – then coriander powder, Mathania Chilli powder, he added water as per the required quantity and cooked it for 30 mins at least more – later he mixed curd – more 10mins and it was ready to eat.
Our Experience – Doulat Singh ji starts at 3 pm and works till 10:30 pm in his ‘Khangana Laal Maans Take Away’ a roadside small counter where he prepares food to serve his customers. Our meeting with him started with his story of life which starts from his early days to till date and he looked fully satisfied with the journey that he covered. Initially, he became an expert in his cooking skills and later his skills gave him the way out in life. Yes, the fact about the taste of the recipe that we covered was superb and rare to find in its superlative form of it. It is said that place does not matter if you need it. He mentioned politely that – ‘Kaam to Karna he padega’ (you have to work to earn your bread) which made him honest towards his work. We could actually feel the aroma while he was preparing the food. Doulat ji mentioned about recipes other than Laal Maans that he cooks like – Chicken in a similar style, Stew Chicken, White meat, jungle meat, etc. We ate Laal Maans and similar-style Chicken along with plain Roti (chapatti) and Bajra Roti. The recipes were properly cooked and tasty. He also cooks based on the order he receives. Overall – if you need taste and if you are a non-veg food lover then this place will not disappoint you.
