Khatik Kaka's Culinary Journey

Khatik Kaka’s journey in the world of food began at a young age, as he recounts his family’s deep-rooted connection to the art of rearing and butchering goats. From purchasing and selling live goats to eventually opening a small restaurant, Khatik Kaka’s expertise has been honed over decades of hands-on experience.

As he proudly shares, “My entire life has been dedicated to this work. It’s in my roots, in the roots of my ancestors. I’ve been involved in this business since the very beginning – buying, selling, and butchering goats. Later, I decided to open a small restaurant, and the customers were pleased with the homemade dishes I served. From there, the business has grown and grown, and now people from far and wide know about my place.”

Khatik Kaka's Signature Mutton Bati Choor

At the heart of Khatik Kaka’s culinary offerings is his renowned Mutton Bati Choor, a dish that draws in customers from near and far. Khatik Kaka personally selects the finest goats, meticulously butchering them and hand-picking the perfect cuts to ensure the most flavourful and tender meat.

The preparation process is a true labour of love. Khatik Kaka shares, “I bring the freshly butchered goat meat here, and I myself cut and prepare the pieces. I don’t let anyone else do it because I want to ensure the quality and taste. I’ve been doing this for 50 years, so I know exactly how to do it right.”

The Authentic Rajasthani Cooking Technique

Khatik Kaka’s kitchen is a testament to his dedication to traditional cooking methods. The restaurant is equipped with a line of pressure cookers, each one bubbling with the rich aromas of mutton and chicken dishes. This age-old technique, passed down through generations, ensures that the flavours are perfectly balanced and the meat is cooked to perfection.

As Khatik Kaka explains, “I don’t use any fancy equipment or techniques. I simply cook the meat in the traditional way, using pressure cookers. This is how it’s been done in our village for generations, and it’s the best way to bring out the true flavours of the meat.”

Exploring the Diverse Rajasthani Flavours

Khatik Kaka’s menu goes beyond the signature Mutton Bati Choor, offering a wide range of Rajasthani non-vegetarian delights. Customers can indulge in succulent chicken dishes, flavourful fish curries, and even the option to customize their order based on personal preferences.

Khatik Kaka’s wife and family members play a crucial role in the restaurant’s operations, with his wife responsible for preparing the traditional Bati, a staple accompaniment to the mouth-watering mutton dishes.
