Bhairon Vilas Special Mutton Recipe

Ingredients:

  • 2 kg mutton, cut into pieces
  • 4-5 tablespoons mustard oil (Sarso ka tel)
  • 2-3 onions, finely chopped
  • Curd
  • 2 tablespoons garlic paste
  • 1 tablespoon ginger paste
  • 2-3 bay leaves
  • 5-6 dry red chilies
  • 5 tablespoon coriander powder
  • 2 tablespoon Coriander Seeds Whole
  • 2 tablespoon red chili powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  • Fermenting the Mutton:
    • In a bowl, Set it aside for at least 4-5 hours to allow the flavours to ferment the mutton for its natural sourness (per old Royal recipe).
  • Sautéing the Onions:
    • Heat Oil in a large copper pan over medium heat. Add black papper, bay leaves, etc (all Indian spices – Khada Masala).
    • Fry the mutton in oil for one hour. When the mutton turns light brown, then add salt and onion.
  • Cooking the Mutton:
    • Cook for about 30 minutes, stirring occasionally, until the mutton changes color and releases its juices.
  • Adding Spices and Tomatoes:
    • Once the mutton is partially cooked, add coriander powder, chilli powder, whole red chillis and continue cooking for a few more minutes.
    • Pour in the Curd, mix everything thoroughly, and cover the pan. Cook until the curd are well blended and the mixture thickens, releases the oil.
  • Finishing Touch:
    • Once the mutton is cooked and the gravy reaches the desired consistency, check for seasoning and adjust salt or spices if necessary.
    • Garnish with freshly chopped coriander leaves before serving.
    • Smoke is applied in a bowl with ghee and burnt coal (locally called Dhungar).
